Vegan Gluten Free Pie Crust

The first step is to make the pie crust. In a food processor, combine 1 1/2 cups of almond flour, 1/4 cup of tapioca flour, 1/4 teaspoon of salt, and 1/4 cup of vegan cannabis infused butter. Pulse until the mixture resembles coarse crumbs. Then, add 1 tablespoon of ice water and pulse until the dough comes together. Next, press the dough into a 9-inch pie plate and refrigerate for 30 minutes.

While the crust is chilling, make the filling. In a large bowl, whisk together 2 cups of pumpkin puree, 1/2 cup of almond milk, 1/2 cup of sugar, 2 tablespoons of cornstarch, 1 teaspoon of ground cinnamon, and 1/4 teaspoon of ground ginger. Pour the filling into the prepared crust and bake for 45 to 50 minutes, or until the filling is set. Let the pie cool completely before serving. Enjoy!

How to Make Vegan Cannabis Infused Butter

For vegan cannabis butter, you’ll need: 1 cup vegan butter, 1 gram decarboxylated cannabis, a double boiler or crockpot, and cheesecloth. Decarboxylate your cannabis by heating it in an oven at 220 degrees Fahrenheit for 25 minutes. This will activate the THC in the plant. Melt the vegan butter in the double boiler or crockpot on low heat. Add the decarboxylated cannabis and stir frequently. Let it simmer for 2-3 hours, stirring occasionally. The longer you let it simmer, the more potent the butter will be. Be sure not to let it boil. After 2-3 hours, remove from heat and allow to cool slightly. Place the cheesecloth over a jar or other container and pour the mixture through it to strain out the plant matter. Squeeze the cheesecloth to get all of the butter out. Let the butter solidify before using, then enjoy! You can use this vegan cannabis butter in any recipe that calls for regular butter. Just keep in mind that a little goes a long way when it comes to edibles! Start with a small amount and increase as needed.
